We are looking for an experienced assistant brewer to join our team. We are located on 9 Prestige Circle, Allen, TX 75002. Our ideal candidate is self-driven, ambitious, hard-working, and is passionate about beer!

We will be operating both a 30bbl steam-fired Prospero and 4bbl direct fire PKW brewhouses to service a large brewpub and distribution. We're targeting a August 2023 opening date and have begun our search for an Assistant Brewer. I've included a basic outline of Assistant Brewer duties below, but you know what the job entails if you're reading this.

Armor Brewing Company Job Description

- Assistant Brewer Wort Production

-Ensure accuracy of grain, hop, yeast, and specialty ingredient inventories Coordinate orders of grain, hops, yeast, etc.. to ensure all products can be brewed and released on schedule

-Produce high quality wort by ensuring consistency with recipes, hitting targets for gravity, IBU, SRM, etc.. and monitoring batches of beer throughout the production process

-Make point-of-problem decisions when brew days go awry, including final in the moment calls of whether to tweak recipes, add sugars, or adjust target volumes

-Seek out and participate in collaborative projects with other breweries, non-profits, etc.. to maximize leverage for the Armor Brand Fermentation and Conditioning

-Coordinate with Head Brewer to check gravity, pH, aroma, flavor, etc.. on every tank daily to monitor fermentation progress and overall product quality

-Collect QA/QC samples from tanks and perform microbiological testing as needed

-Condition beers using various techniques including dry-hopping, puree additions, etc...

-Advise Head Brewer on status of beers for cold crashing based on gravity and QA/QC checks Transfers, Packaging

-Perform CIP on fermenters, brites, brinks, barrels, etc.. as needed and directed by Head Brewer

-Follow SOPs for tank transfers, minimizing oxidation and spoilage of beers in the process

-Maintain quality and cleanliness of cooperage (kegs, barrels, etc..)

-Aid in packaging of can and draft beer as well as distribution cooler organization

-Continually monitor and seek to improve canning techniques to increase efficiency of packaging days and mitigate the risk of oxidation, over carbonation, spoilage, etc.. in canned beer Other General Duties

-Maintain high levels of cleanliness and organization in production area

-Ensure proper records are kept for TABC, TTB, Ekos, ETC…

-Aid in general maintenance tasks (scrubbing tanks, rebuilding pumps, boiler maintenance, etc…)

-Maintain taproom draft line cleanliness with Head Brewer and Tap Room Manager Distribution

-Maintain positive relationships with distributors of our product

-Aid Head Brewer with pick-ups of beer by distributors -Ensure proper invoicing for all beer leaving the building through distribution channels Additional

-Maintain a professional manner while at and/or representing Armor Brewing Company

-Occasionally lift up to 55lbs and work in a loud, hot, cold, and/or wet environment

-Work occasional nights/weekends on an as needed basis
